I love eating foods from all over the world! Recently I fell in love with the flavours of Moroccan food and came up with this Moroccan Chicken Recipe that is delicious and kid-friendly!
I make it with chicken or chickpeas depending on what I have on hand. It can easily be made Vegan with chickpeas if that’s more your style!
The ingredients are simple and can be found at any major grocery store. SO no need to worry about going to an international grocery store or ordering obscure ingredients online! I LOVE simple home cooking!
- 4 chicken breasts cubed
- 3 large tomatoes
- 1 carrot
- 1 small onion
- 2 tsp Moroccan spice blend
- 1 tsp salt
- 2 tbsp coconut oil
- half of a cucumber cubed
- greek style yogurt
- cutting board
- high powered blender (optional – you can just grate everything on a cheese grater or leave it chunky. I have young kids, so the smoother the better!)
- medium saucepan
Step One. Cube chicken breasts and cook thoroughly in the pan with the coconut oil.
Step Two. To a blender add the carrot, tomatoes, onion, salt, and spice mix. Blend until smooth.
Step Three. Once the chicken is cooked add the sauce to the pan and simmer for about 15 minutes to reduce.
Step Four. Cook rice in desired fashion.
Step Six. Layer the rice, chicken, cubed cucumber, and yogurt on your plate and serve!
I like that this Moroccan chicken recipe takes 30 minutes to make and I can have a yummy dish on the table in no time!
