I don’t know about you, but I find it hard to say no to chocolate! So I was thrilled when chia seeds hit the trendy food game and I could use their super absorbent qualities to my advantage. This chocolate chia pudding is delicious!
I first began making this pudding a few years ago when I had to go dairy-free because one of my kids were sensitive to it while I was breastfeeding them.
I was desperate for a treat and decided to figure out how I could make some desert for myself. And that’s when this chocolate chia pudding recipe was born. I like that it’s easy to make and doesn’t take many ingredients.
My kids love to do the shaking for me! They make the best faces! LOL
Why Chia Seeds?
Chia seeds are remarkably absorbent! When you combine them with liquid they absorb it and carry it through your digestive tract keeping you hydrated.
They are also super high in fiber, protein, anti-oxidants, and other minerals. Combining them with the anti-oxidant qualities of dark chocolate and you’ve got a dessert that will leave you healthier instead of the opposite!
Chocolate Chia Pudding
- 1 1/2 C Non-dairy Milk
- 1/4 C Chia Seeds – Ground
- 3 Tbsp Maple Syrup
- 3 Tbsp Dark Cocoa Powder
- Dash Pink Salt
- Pour the chia seeds into a coffee grinder and grind them until they are powder. Then, in a mason jar, pour in the milk of your choice, cocoa powder, a dash of salt, and the maple syrup.
Put the lid on the jar and shake it vigorously to combine.
Once the ingredients have been combined well add in the chia powder and replace the lid on the jar. Mix for a minute with a fork and then replace the lid on the jar again and shake.
Put the jar in the fridge overnight and enjoy the next day.
