Living in the country these last 18 months has affirmed the necessity of making things yourself. This is why I began making my own mayo from scratch. Making it yourself will also save you LOADS of money.

So why do I use it?

Avocado oil is one of the healthiest plant oils you can find. It actually improves your cholesterol by reducing bad cholesterol and raising good cholesterol and it is very heart healthy. This is because it is high in oleic acid and the omega’s.

These good fats can enhance the absorption of other nutrients you might be getting from other foods. Which means you’ll get more benefit from the other foods you eat if you pair them with avocado oil.

There is evidence that avocado oil can help improve symptoms of many things from arthritis to gum disease. It is great for your skin and is used in many skin care products topically. Some evidence shows that it can even speed up wound healing!

Its All About The Flavour!

The flavour of avocado oil is very mild unlike other oils like olive oil or coconut oil. I use both of those oils for different purposes but I like the mild neutral flavour of avocado oil in my mayo so that is has a nice creamy taste. This makes the other flavours in the dish you are making stand out.

The Recipe

Avocado Oil Mayo

Equipment

  • Immersion blender.
  • Tall mason jar.

Ingredients
  

  • 1 cup avocado oil
  • 1/2 tsp mustard
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 whole egg
  • 1 tsp lemon juice

Instructions
 

  • In the bottom of a tall mason jar add the egg, salt, pepper, mustard, and lemon juice.
  • Carefully add in the avocado oil.
  • Place your immersion blender into the very bottom of the jar where the egg is. Then turn on your blender to high and blend only the egg at the very bottom. When you see it turn creamy slowly move your immersion blender up and down to slowly incorporate the avocado oil.
  • Once all of the oil has been combined remove your immersion blender and scrape off the excess. Put a lid on the jar and store in the fridge for up to a week.

How Can You Use Avocado Oil Mayo?

Simple! Just like you would any other store-bought mayo! I like to use it on sandwiches, in chicken or egg salads, and as a base for salad dressings!
